Creamy Mushroom Risotto

Rich and creamy Italian rice dish with mixed mushrooms and Parmesan.

Ingredients

  • 2 cups Arborio rice
  • 500g mixed mushrooms
  • 6 cups chicken stock
  • 1 cup white wine
  • 1 onion, diced
  • 3 cloves garlic
  • 1 cup Parmesan
  • 4 tbsp butter
  • Fresh parsley

Instructions

    Heat stock in a pot and keep warm.

    Sauté mushrooms in butter until golden, set aside.

    Sauté onion and garlic until soft.

    Add rice and toast for 2 minutes.

    Add wine and stir until absorbed.

    Add stock one ladle at a time, stirring constantly.

    Continue until rice is creamy and al dente (20-25 min).

    Stir in mushrooms, Parmesan, and butter.

    Garnish with parsley and serve immediately.
