I'm not even going to bother apologizing for infrequent posts anymore - if this were a paid gig I'd make time, but it's not so I can't. But right now I'm watching some ridiculous movie about Barbie the Butterfly Fairy and I can't stop until I see how it all turns out (I'm sure Barbie is going to die a horrible death any moment now, probably when some giant hand grabs her and pulls her wings off) so I might as well make semi-productive use of the time.
Anyway, before the Barbie Fest we were playing whack-a-mole, which of course put me in mind of chicken mole. And of course I am SO not about recipes with zillions of ingredients where you have to make a special trip to more than one store, so my version is a somewhat (okay, quite a bit) simplified one.
Whack-a-Chicken-Mole Wings
2 tsp. salt
1/2 tsp. black pepper
1 c. water
3 large dried chiles
2 lg. onions, chopped
2 cloves garlic, minced
2 c. tomato sauce
2 Tbsp. sugar
1 tsp. ground cinnamon
1 oz. (1 square) unsweetened baking chocolate
2 lbs. chicken wings
Combine salt, pepper, water, chiles and onions in a medium saucepan. Simmer for 30 minutes over low heat. Add garlic, tomato sauce, sugar, cinnamon and chocolate. Stir until heated through and chocolate is melted.
Season wings with salt and pepper and broil them, skin side up, under a preheated broiler for 10 minutes or until golden. Turn the wings and broil them for 10 more minutes, or until golden on the other side. Pour the mole sauce into a skillet, add the wings, and simmer uncovered for 30 minutes. Serve wings with mole sauce over rice if desired.
