Pomegranate Wings (Another Lucky Food, and Football-Friendly, Too!)

Seems like it's already shaping up to be a pretty good new year in my neck o'the woods, as our beloved Redskins have, against all odds, clinched a playoff spot! Woo hoo! In their honor, I just found a new recipe that not only makes use of the oh-so-lucky pomegranate (also a fertility symbol, though, so be forewarned) but is also a great gametime snack food since it involves chicken wings. It's also red, like the (admittedly un-pc named) Redskins' jerseys.
Okay, with no further babbling on my part, I present the Pomegranate Council's
Sticky Red Wings
3 lbs. chicken wings
1/2 tsp. vegetable or canola oil
2 tsp.s minced fresh garlic
3 tbsp. minced fresh jalapenos
1 c. pomegranate juice
1 c. cranberry juice
1/3 c. sugar
2 tbsp. cider vinegar
3 tbsp. pomegranate seeds
Salt
Rinse wings, drain and cut apart at the joints. Place in a single layer in 10"x15" inch nonstick pan. Bake in a 400 degree oven until brown and crisp, about 1 hour, turning pieces occasionally.
In a medium nonstick frying pan over high heat, stir oil, garlic, and jalapenos for 2-3 minutes. Add pomegranate juice, cranberry juice, sugar, and vinegar. Stir until sugar dissolves, then bring to boil. Boil until reduced to 2/3 cup, about 15 minutes.
Drain and discard fat from chicken wings. Pour pomegranate sauce over wings and turn pieces. Bake until sauce thickens and sticks to wings, turning often-should be about 12 minutes.
And if your team wins (in whatever sporting event you find yourself watching on New Years' Day), you might like to wash those wings down with some
Pomegranate Champagne
Pour 1-2 tbsp. pomegranate syrup into a champagne glass, fill with sparkling wine. Float a few pomegranate seeds in the glass as a garnish.
