More Fun with Candy Canes

Enjoyed whacking those candy canes? Feel like bashing a few more? As promised, yet another way to use up the after-Christmas leftovers. This recipe makes cookies that taste almost exactly like Thin MInts (my favorite-ever Girl Scout cookie), even though the "secret" ingredient in this version is one that would make me go "blecccchhhh" if I hadn't already tried these and liked them. Seems these cookies are actually chocolate-dipped Ritz crackers (my un-favorite cracker), but you can't taste the Ritz at all.
Easy Peppermint Chocolate Cookies
* 35 Ritz-type crackers (about 1 sleeve)
* 1 c. semisweet chocolate chips
* 1/4 tsp. peppermint oil
* 1 standard-sized candy cane (about 6")
Smash up that candy cane. Get out all of that end-of-year aggression. Smash up a few more, if it makes you feel better. You can't have too much crushed peppermint (plus you'll probably spill some on the floor anyway).
Melt the chocolate chips in a double boiler or microwave, however you like to melt things. Heck, use a blowtorch if you're feeling really homicidal. (Preferably one of the teeny creme brulee torches. I have no idea if these melt chocolate chips, though, as I've never actually seen one outside of pictures in cooking magazines.) Then stir in the peppermint oil, mix well, and turn off that torch before you burn down the house.
Dip each Ritz in the chocolate until it's entirely coated, using a knife to smooth it off and make it look pretty. (Something I never really manage to do, I am mistress of the slightly lopsided.) Then set each cracker/cookie (crookie?) on a wax paper-lined baking sheet or plate and sprinkle with crushed candy cane. Let these sit and harden in the refrigerator for at least 1/2 hour before you dive in.
And if you're really desperate for a Girl Scout cookie fix and can't wait until...March?, you can always make these without the candy canes and peppermint oil, but with peanut butter which you spread on each cracker before dipping. Voila! Mock Tagalongs to go along with your mock Thin Mints!
