How Sweet (Potato Cake) It Is

Long(ish) time no blog. For the second time in a row the universe (or a bunch of editors) has seen fit to drop a big old load of work on my lap on a Friday! What's up with that? Well, it isn't like I had fabulous weekend plans anyway. It's January, it's cold, I just want to stay indoors. I don't even live in the kind of place that has the nice scenic sort of winter weather that you celebrate with an outdoor ice carnival or snowfest - I mean, who'd want to go to DC Damp Drizzle Days?
If there were DCDDD, though, they'd be sure to serve sweet potato cake. Love that sweet potato cake. I don't even like sweet potatoes, I'm so-so about sweet potato pie, but once you take your sweet potatoes and bake them into a cake...it's all good. Even the damp drizzle.
Sweet Potato Cake
* 2 c. sugar
* 1 c. butter
* 2 1/2 c. cooked sweet potatoes, mashed
* 4 eggs
* 3 c. flour
* 1/4 tsp. baking soda
* 1/2 tsp. nutmeg
* 1 tsp. cinnamon
* 1 tsp. vanilla
* 1/2 c. chopped pecans
* 1/2 c. flaked coconut
Cream the sugar and butter together. Mix in the sweet potatoes, continuing to beat until the mixture is fluffy and light. Add the first egg, then beat until thoroughly mixed in. Repeat with each egg until all of them are mixed into the cake batter. Mix the flour, baking soda, nutmeg and cinnamon, and stir the dry mixture into the cake batter a cup at a time. Stir the vanilla, pecans and shredded coconut into the batter. Pour the batter into a lightly-greased 10-inch tube pan. Bake the cake at 350 degrees for an hour and 15 minutes or until a toothpick inserted into the center comes out clean.
You can serve it topped with nothing more than a sprinkle of powdered sugar, or it'd good bare naked, too. If you like, though, you can make this frosting:
* 1 lb. powdered sugar
* 1 large orange
* 1 large lemon
* Chopped pecans or peanuts (optional)
Grate the rind from the lemon and the orange. Mix the grated rind into the powdered sugar. Squeeze the juice out of the lemon and orange. Strain the juice and mix it into the sugar a little at a time until it is the right consistency to spread easily.Spread the frosting over the top of the cake while it is still warm. Sprinkle the frosting with chopped pecans or peanuts if this is one of those times you feel like a nut.
