Depression Pudding (Two Kinds)

Two kind of pudding, yes, but also two kinds of depression. The first refers to the Great Depression, the one in the '30s. Depressing, true, but you know, in a way, it must have been nice to have had so many people in the same boat all at the same time. Must have taken a bit of the stigma out of economic failure. Of course, I guess I would find the same camaraderie if I lived in an industrial town where all of the jobs had been outsourced overseas, I mean, times are tough all over, sort of. This area, though, seems to have a never-ending flow of overpaid young (or middle-aged) things conspicuously consuming all over the darned place. Luckily my son is too young to notice that our household income has several 0s less than that of his schoolmates, even though it's public school (guess it's hard to pay tuition when you've got to make payments on the Lexus and the $1.5 million condo, poor things). Anyway, as I get in touch with my inner Okie, here's:
(Great) Depression Pudding
* 1 c. brown sugar
* 1 tsp. butter
* 4 c. boiling water
* 2 tsp. vanilla
* 1/4 c. softened butter
* 1 c. sugar
* 2 c. flour
* 1 c. milk
* 4 tsp. baking powder
* 1 tsp. cinnamon
Combine first four ingredients and boil for five minutes. Pour into a greased baking dish and drop spoonsful of the batter over the syrup. Bake 30-35 minutes at 350. Serve topped with whipped cream if you're feeling in the money.
And now for the second type of depression, and pudding - the "want to stay in bed all day" kind. I was reading someone else's blog (that I pulled up by typing something like "winter sucks" into a search engine) and he said something about how depression for him was kind of like the Super Bowl in that it took place in winter and required at least 3 party subs. Yeah, same here, except mine prefers buffalo wings, pizza and beer. And it tends to last past the Pro Bowl, even (although it probably wouldn't if it, too, took place in Hawaii - think I'd snap out of it ASAP under those circumstances). Another thing that helps is chocolate - turns out Harry Potter was right, it's the theobromine in chocolate that helps counteract the Dementor effect. If you have the energy to get out from under the covers and into the kitchen, here's:
(Clinical) Depression Pudding
* 1 c. flour
* 1/3 c. cocoa
* 3/4 c. sugar
* 2 tsp. baking powder
* 1/2 tsp. salt
* 1/4 cup shortening
* 1 egg
* 2/3 cup milk
Sauce
* 3/4 c. sugar
* 3 tbsp. cocoa
* 2 tbsp. cold water
* 2 c. hot water
Mix dry ingredients, cut in shortening. Mix in egg and milk and stir until just combined. Pour into into 9" cake pan. Combine sauce ingredients, pour slowly over batter. Bake 40 minutes at 350. Serve warm with whipped cream or ice cream.
